Ingredients

  • 1 cup corn flour
  • ½ cup unbleached all-purpose flour
  • ½ teaspoon kosher salt
  • 1 ½ teaspoon baking powder
  • 3 tablespoons granulated sugar
  • 2 large eggs
  • 1 can 12 oz. evaporated milk
  • 1/4 cup vegetable oil

Instructions

  • Mix all dry ingredients in a large mixing bowl
  • Add Oil
  • Beat eggs in a separate bowl then slowly mix into dry ingredients.
  • Slowly add the evaporated milk and stir as you go.
  • Continue to mix the batter until everything is thoroughly incorporated.
  • Spoon into waffle maker and cook until light comes on.
