Chickpea Salad

Chickpea Salad with flavorful vegetables, avocado and feta is a light and filling salad that should fit into your regular meal schedules.

Chickpeas

Chickpeas also know as garbanzo beans are packed with protein and fiber. Chickpeas can be purchased in their raw form or canned. Organic choices are available in both forms. Keeping canned garbanzo beans or chickpeas on hand make it super simple to add to meals and recipes. For this recipe and most recipes be sure to drain the chickpeas. You will see an outer skin that comes off very easily. That is ok. You can rinse them in a strainer or colander also.

The dressing

Making this dressing is also easy and keeps well. You can also adjust the ingredients a bit if you are cutting down on oil or salt. And by all means if you have a dressing you like better then use that.  One real trick to a good dressing is to make sure you emulsify the ingredients well. Another mix the heck out of it. I use a frother. You can shake the container for 3-5 minutes or put it in a blender or mixer of some sort. Here is a video of a Lemon Vinagrette that I made using the frother.

That is really all there is to it. Put it in a bowl and add just a bit of dressing.  It doesn’t need much so go moderate and then taste. You can always add more.

Ingredients

  • 3 Tbsp extra virgin olive oil
  • 3 Tbsp lemon juice from 1 large lemon
  • 1 garlic clove pressed or minced
  • 1/2 tsp sea salt or to taste
  • 1/8 tsp black pepper
  • 1 1/2 cups cherry tomatoes halved
  • 1 English cucumber halved and sliced
  • 15 oz chickpeas or garbanzo beans drained, rinsed
  • 1/2 medium red onion thinly sliced
  • 1 avocado sliced
  • 1/4 cup cilantro chopped
  • 4 oz feta cheese diced

Instructions

  • Combine the dressing ingredients in a small bowl: 3 Tbsp olive oil, 3 Tbsp lemon juice, 1 pressed garlic clove, 1/2 tsp salt and 1/8 tsp pepper and whisk to combine (or shake them together in a small mason jar).
  • Combine remaining chickpea salad ingredients in a salad bowl, add dressing to taste (we used all of it) and toss to coat.
