Caesar Dressing

Being plant-based often times means eating a lot of salads but they do not have to be boring. This Caesar Dressing makes a great topping for salads, greens and even your vegetables. Creating delicious dressings is not difficult and can be done quickly in a processor or Vitamix.

The real trick

When making any kind of sauces or dressings like this Ceasar Dressing, you want to be sure to mix it thoroughly. That is where the equipment you use can be important. You really want to pulverize the nuts to a cream. Sometimes soaking the nuts, especially Cashews, can help. Another trick I use is to buy organic or clean nuts in bulk. They can easily be frozen. When you have a store of nuts you are ready for anything; dressings, nut butters, recipes, ice creams or desserts and thickeners and sauces. Buying in bulk is also a way to save money. So it is a win win!

How long will it keep?

Another trick is to use the correct container to store your dressings in. Make sure to use a glass container that can be sealed airtight. This will give you the longest shelf life. Dressings with vinegar will last longer than some cream dressings so put a label on the bottle and try to use up in a week or two.

Caesar Dressing

The creaminess is derived from the blended raw nuts, and the taste is absolutely marvelous – almost unbelievable, in fact, that it tastes so authentic.

Ingredients

  • 1/4 cup raw cashews or raw sunflower seed
  • 1/8 cup raw pine nuts or raw sesame seed
  • 3 tbsp freshly squeezed lemon juice
  • 1 tbsp cold-pressed extra virgin olive oil can omit for oil-free version
  • 1 medium clove garlic chopped
  • 1 tsp mild miso I use Genmai brown rice or barley miso
  • 1/2 tsp sea salt
  • 1/2 tsp kelp granules Maine Coast Sea Seasonings brand
  • freshly ground black pepper to taste
  • 1 tsp raw agave nectar
  • 1/4 cup water or more to thin as desired

Instructions

  • Using a hand blender or in a blender, combine all ingredients (starting with ½ tsp agave nectar and purée until very smooth.
  • Add additional water to thin dressing if desired. Taste test, adding additional agave nectar if desired.

Notes

* This dressing will thicken after refrigeration; you can thin it by stirring in 2–3 tsp water if desired. When thick, this dressing can be used as a veggie dip.
*If nut allergies are a concern, substitute raw sunflower and sesame seeds in place of cashews and pine nuts, respectively. The dressing will be just as delicious, though you may need additional agave nectar to sweeten to taste.
