Grilled Cheese and Tomato Soup
I’m pretty sure most kids grew up with tomato soup and grilled cheese sandwiches. And even to this day it sounds delicious. They even have restaurants that do nothing but tomato soup and grilled cheese sandwiches. But at some point, you want to step up your soup flavors and make it more “adult”. This Garlic Tomato Soup or Bisque does just that.
Very simple ingredients bursting with wonderful tomato garlic flavor. You don’t have to buy canned tomato soup anymore. You can put this soup together in less than a half an hour and have a wonderful bowl ready to eat in no time at all.
Ingredients
Pick the best qualities of vegetable broth, tomato paste, organic cane sugar, kosher sea salt and crushed ground black pepper and you will have a gourmet version of this delicious garlic tomato soup. You can use fresh garlic instead of flakes. You can top with breadcrumbs or chopped chives. And even drizzle with a little bit of olive oil on the top for a more traditional Italian version.

Freezer Soup
Make big pots and pop into the freezer. This makes it real easy to grab a plant-based meal when you’re in a hurry or life gets away from you.
One trick is to soup into singles serving freezer bags and freeze them laying down flat. Then you can stand them up and file them in the freezer and pull one out at a time as you need it. Be sure to write the name of the soup on it and maybe the date. As much as we think we’re going to remember what soup it is, freezing really can change the look of what it was. Of course, there’s always the soup surprise, right? Defrost it and figure out what it is later. We’ve probably all done that too.

Garlic Tomato
Ingredients
- 1½ cups hot water
- 2 tablespoons Vegetable Broth Powder or prepared Broth
- 2 tablespoons olive oil + additional for serving
- 2 teaspoons Garlic Flakes
- 2 tablespoons Tomato paste
- 15 ounces Tomato sauce
- 1 tablespoon Organic Cane Sugar
- 1 teaspoon Kosher Flake Sea Salt
- Black Pepper for serving
Instructions
- In a 2-cup glass measuring cup, mix hot water and vegetable broth powder, and set aside or 2 cups prepared vegetable broth
- Heat a pot over medium low-heat. Add olive oil and garlic flakes and let cook for about one minute, until fragrant. Stir in tomato paste and cook for one to two minutes more, until well combined.
- Stir in tomato sauce, sugar, salt and 1 cup of the broth. Bring to a boil, reduce to a simmer, and let cook for 10 minutes. If too thick, add a bit more broth as desired. After 10 minutes, taste and adjust salt if desired.
- Divide soup into 4 bowls; top with olive oil and black pepper, and serve.
