This delicious nutrient-filled recipe will turn into a family favorite! This Mediterranean Bowl includes a fresh parsley salad, olives, homemade falafel, tahini, and chili garlic sauce. Each one of the ingredients is delicious on it’s own so imagine how flavorful this bowl is when they are all combined.

Putting it together

Now there are many ways to go about putting this together. The easy way is where most of the items are prepared already. Then the traditional way which is to make it all from scratch. I do a combination of both. Creating complete meal bowls is a fantastic way to create a filling and flavorful plant-based meal. If you are purchasing pre-made ingredients like the falafel, make sure you are buying a food that is not over processed, contains clean or organic ingredients and is fresh or frozen. I have purchased some very good falafel from Costco in the past. I keep the package in the freezer and can just pull out what I need.

The Parsley Salad

Yes you can eat parsley and it is flavorful and good for you. Parsley Salad is a Mediterranean classic and is sometimes called Tabbouleh or Taboulli when there is a grain added. By all means feel free to use store bought Tabouli or here is a recipe from The Mediterranean Dish.  You will find that either way Tabouli will become a favorite salad for everyday additions to meals.

Once you have an idea of how to make a bowl you can use some of the ingredients as a base. This will help you create your own beautiful bountiful bowls. You can add or substract based on what you like. You can add greens, grains and other vegetables to make it your own creation.

Ingredients

Parsley Salad

  • 2 cups fresh chopped parsley
  • 1/2 cup diced tomato
  • 1/4 cup diced red onion
  • 2 Tbsp lemon juice
  • 1 pinch sea salt
  • 1 Tbsp extra virgin olive oil

Sauces

  • Tahini Sauce
  • Chili Garlic Sauce
  • Garlic Dill Sauce

Serving

  • Hummus or store-bought
  • Kalamata or green olives pitted
  • Pita / Pita chips / Flatbread optional

Instructions

  • First prepare falafel by following this easy falafel recipe.
  • You will need ~10 falafel total, so adjust amounts accordingly. You can also prepare your falafel ahead of time and keep it uncooked in the freezer. To cook, thaw and cook per recipe instructions.
  • Prepare the parsley salad by adding parsley, tomato, onion, lemon juice, salt and olive oil. Add to mixing bowl and toss to combine. Set aside.
  • To serve, divide parsley salad between serving bowls and top with hummus, olives, and desired number of falafel ~ 4-5 per bowl).
  • Serve with additional sauce of choice Tahini or Garlic Sauce! Fresh lemon juice, chili garlic sauce, and pita can also be added on the side.
  • Store leftovers covered in the fridge up to 2-3 days. Store and reheat falafel separately.

Notes

*If you don’t have time to make falafel, sub raw chickpeas.
