Whole Wheat Blueberry Pancakes

Ingredients

  • 1/2 cup quick cooking oats
  • 1/2 cup whole wheat or spelt flour
  • 1 tablespoons packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 eggs
  • 1/2 cup soy or nut milk
  • 1 tablespoon trans-fat free margarine melted
  • 1/2 cup Blueberries

Instructions

  • Stir together oats, flour, brown sugar, cinnamon, baking powder, baking soda 
    Whisk together eggs, milk and butter in medium bowl. Add to flour mixture and stir until combined. Batter will be lumpy. Gently fold in blueberries.
    Heat large nonstick skillet over medium-high heat; brush lightly with oil or spray with cooking spray. Spoon about 1/4 cup batter into skillet and spread to 3-inch pancake.
    Cook until bubbles pop on surface and underside is lightly brown. Turn and brown second side.
    Serve with fresh berries, maple syrup or fresh fruit syrup if desired.
