1/2cupquick cooking oats
1/2cupwhole wheat or spelt flour
1tablespoonspacked brown sugar
1teaspoonground cinnamon
1/4teaspoonbaking powder
1/4teaspoonbaking soda
1/8teaspoonsalt
1eggs
1/2cupsoy or nut milk
1tablespoontrans-fat free margarinemelted
1/2cupBlueberries
Instructions
Stir together oats, flour, brown sugar, cinnamon, baking powder, baking soda Whisk together eggs, milk and butter in medium bowl. Add to flour mixture and stir until combined. Batter will be lumpy. Gently fold in blueberries.Heat large nonstick skillet over medium-high heat; brush lightly with oil or spray with cooking spray. Spoon about 1/4 cup batter into skillet and spread to 3-inch pancake.Cook until bubbles pop on surface and underside is lightly brown. Turn and brown second side.Serve with fresh berries, maple syrup or fresh fruit syrup if desired.
