What is for dinner? Do you know when it’s the middle of the week and you’re trying to figure out what to make and you’ve really should go grocery shopping? Well, this is one of those recipes that comes together super quickly and you probably have the ingredients already in the pantry or cupboard. I used Soba noodles but you can use Spaghetti noodles or Ramen noodles or other noodles of this type.

Well, this is one of those recipes that comes together super quickly and you probably have the ingredients already in the pantry or cupboard. Another pasta dish, but wait!

Again, whatever you have on hand it will work. And you start by cooking the pasta al dente. Meanwhile why the water was boiling and heating up I put together the sauce. There’s a lot of ingredients in the sauce that’s what packs the flavor. So, don’t feel obligated to stick exactly to it. If you don’t have dark sesame oil you can use light sesame oil. If you do not have rice vinegar you can use apple cider vinegar. And such changes like that without modifying too much of the actual ingredients so that you don’t lose the real flavor.

Sugar or not?

You can modify the sugars a bit but be careful because sugars can give it a different flavor like with brown sugar it would take out a more maple the type of flavor. I did not have the Sriracha. So, I used a Thai chili sauce that I had on hand and it worked wonderfully. I also thought about potentially just putting in a little bit pinch of red cayenne pepper. This all depends on how much heat you like some people like their Asian dishes with some kick and this dish certainly lends itself to either.

Additionally the vegetables can probably be swapped out if you choose to. I did not have the green or red peppers and I think next time I might shred a little zucchini or yellow squash I think would be a good addition to this dish. Luckily, I have a Julian peeler so it makes it really easy to just peel the cucumber and carrots into very fine little Julian slices.

Lastly, you could add your choice of proteins if you chose to. I did a marinated tofu that went along with the just fine but if you wanted to do some sort of fish or Shrimp that would go very well with it as well maybe a garlic shrimp skewer might try that next time. In the meantime, this is a keeper for the cookbook try it when you can I think it’ll become a regular favorite with you as well.

Sesame Noodles

A delicious combination of fresh ingredients makes a sauce that brings the pasta to life. Make this lovely Sesame Noodle dish as a side or eat as a small main course. The flavor will leave you wanting more!

Ingredients

  • 1 pkg Spaghetti or Soba Noodles about 16 oz.
  • 6 tbsp Soy Sauce
  • 5 tbsp Dark Sesame Oil can use light sesame oil
  • 3 tbsp Sugar
  • 3 tbsp Rice Vinegar can use apple cider vinegar
  • 2 tbsp Vegetable Oil
  • 3 Garlic Cloves, minced
  • 1 tsp Ginger, graded fresh or paste
  • 1/2 tsp Sriracha Sauce
  • 2 Green Onions, sliced
  • 1 Red Bell Pepper
  • 1 Cucumber
  • 1 Carrot
  • Sesame Seeds optional

Instructions

  • Cook spaghetti according to package directions until al dente in large saucepot of boiling salted water. Drain, reserving 1 tablespoon of pasta water
  • When pasta is al dente drain and reserve pasta water. Return pasta to large sauce pan.
  • Whisk soy sauce, sesame oil, sugar, vinegar, vegetable oil garlic, ginger, sriracha and reserved pasta water in a large bowl.
  • Add soy sauce mixture and green onions to pasta. Let stand at least 30 minutes.
  • Meanwhile, cut bell pepper into thin strips. Peel cucumber and carrot and shred with julienne peeler into long strands or cut into thin strips. Stir into noodles.
  • Serve at room temperature or refrigerate until ready to serve. Top with sesame seeds, if desired.
