1pkgSpaghetti or Soba Noodlesabout 16 oz.

1tspGinger, graded fresh or paste

Instructions
Cook spaghetti according to package directions until al dente in large saucepot of boiling salted water. Drain, reserving 1 tablespoon of pasta water
When pasta is al dente drain and reserve pasta water. Return pasta to large sauce pan.
Whisk soy sauce, sesame oil, sugar, vinegar, vegetable oil garlic, ginger, sriracha and reserved pasta water in a large bowl.
Add soy sauce mixture and green onions to pasta. Let stand at least 30 minutes.
Meanwhile, cut bell pepper into thin strips. Peel cucumber and carrot and shred with julienne peeler into long strands or cut into thin strips. Stir into noodles.
Serve at room temperature or refrigerate until ready to serve. Top with sesame seeds, if desired.
