Easy Vegetable Sandwich

Sandwiches are a quick and easy way to put together a meal and it can be done with whatever you have in the refrigerator.

  • 2 slices whole grain or sprouted grain bread
  • 2 tbsp herb cream cheese
  • 1/4 cup sliced cucumbers
  • 1/2 cup mixed greens
  • 3 slices tomatoe
  • 1/2 cup sprouted clovers or alphafa
  • 1/4 sliced fresh red peppers (can also use jarred roasted red peppers)
  • 1/2 peeled/sliced avocado
  1. Spread cream cheese on one slice of bread and avocado on the other slice. Layer ingredients so that the dryer ingredients go on the bread first. Cucumbers, greens, sprouts then add tomato, peppers and any other vegetables. A little salt and pepper are optional.
