Heart-healthy Beet Chips are a healthy alternative to the classic Potato Chip. Beets are believed to help lower blood pressure and they are absolutely loaded with vitamins and minerals, and are low in fat and calories. Beets are an excellent source of fiber that can promote digestive health. Regular consumption of beets may help reduce the number of chronic health conditions. Prep is most of the work.
First, preheat the oven to 325°F. After that, we will get the pans ready. Cover two medium-sized baking sheets with parchment paper. They get a little juicy and messy so I really recommend covering the baking pan with something and parchment is best as it keeps everything from sticking. If you don’t have parchment paper you could try a coated foil. I love to keep a box of pre-cut cookie sheet parchment paper on hand for most baking projects. A Mandolin or Mandoline. A what?
A Mandoline, with an e. The other is a string instrument.
Definition: A mandoline is used by running a piece of food (with some protection for fingers) along an adjustable inclined plane into one or more blades. On some models vertical blades cut to produce julienne, or a wavy blade is used that produces crinkle cuts. A mandoline can cause injury if not used correctly.
Meanwhile, while the oven is heating up, use a mandolin or a very sharp knife to slice the beets as thin as possible. You are going for potato chip thin and it is not a big deal if they are not all perfectly round. Let’s face it the potato chip manufacturers all slice there potatoes mechanically. We are making homemade chips.
Putting it all together.
Add the sliced beets to a large bowl. Then toss the beet slices with rosemary, olive oil, and sea salt. Remove the beet slices from the bowl and arrange them in a single layer on the parchment paper. Place the baking sheet in the oven and bake for 10 minutes. After 10 minutes have passed, turn the sheets and bake for another 10 minutes. Remove them from the oven and let them cool. These beet chips are tasty when eaten plain or you can pair them with your favorite hummus or dip recipe!

Ingredients
- 1 tbsp Olive Oil
- 2 Red or Gold Beets scrubbed
- 1 sprig Rosemary chopped
- Sea Salt
Instructions
- Preheat oven to 325°F Cover two baking sheets with parchment.
- Use a mandolin to slice the beets as thin as possible.
- In a bowl toss the beet slices with rosemary, olive oil and sea salt.
- Arrange the beets in a single layer on the parchment paper.
- Place baking sheets in the oven. Bake for 10 minutes, then turn the sheetsand bake for 10 more minutes.
- Let the chips cool on the baking sheets before eating. Eat plain or with your favorite hummus for dipping.
