Nut Free Carrot Vegan Balls
A no bake dessert or snack that satisfies those cravings without the added sugars.

Ingredients
- 10 dry dates
- 2 tablespoons honey
- 1 teaspoon vanilla extract
- 1 cup oats
- 2 tablespoons coconut flakes + more for garnish
- ½ teaspoon ground cinnamon
- ⅓ teaspoon ground ginger
- 1/3 teaspoon ground nutmeg
- 1 cup raw carrots shredded

- In a food processor add dates and process until dates are broken down into smaller pieces.
- Add other ingredients and process until mixture are well combined and sticks together.
- Add 2 tablespoon of water or add grated orange zest and orange juice in the mixture.
- Dose mixture with a teaspoon and form small bite-size balls with your hand. Immediately roll a ball in shredded coconut and place on a wax paper. If needed wet your hands to make the balls easier.
- Place finished balls in a refrigerator to cool completely. Keep in cool place until serving.
