Ingredients

  • 10 dry dates
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1 cup oats
  • 2 tablespoons coconut flakes + more for garnish
  • ½ teaspoon ground cinnamon
  • teaspoon ground ginger
  • 1/3 teaspoon ground nutmeg
  • 1 cup raw carrots shredded

Instructions

  • In a food processor add dates and process until dates are broken down into smaller pieces.
  • Add other ingredients and process until mixture are well combined and sticks together.
  • Add 2 tablespoon of water or add grated orange zest and orange juice in the mixture.
  • Dose mixture with a teaspoon and form small bite-size balls with your hand. Immediately roll a ball in shredded coconut and place on a wax paper. If needed wet your hands to make the balls easier.
  • Place finished balls in a refrigerator to cool completely. Keep in cool place until serving.
