Lemon Loaf

A light afternoon snack

This Lemon Loaf is a quick, light and flavorful dessert or treat to put together. It can be enjoyed anytime of the day and will satisfy that sweet tooth with a hint of lemon. Serve Lemon Loaf with some fresh berries for a fruitful treat.

I creamed the butter and sugar by hand but you can certainly use a mixer and I will probably do that myself next time.  Different variations might be accomplished by mixing up the fruit a bit. Maybe a lime loaf or apple juice and cinnamon loaf. It might be worth a try!

After creaming the eggs and sugar, add the eggs and mix thoroughly.  Add the baking powder, flour and salt and mix thoroughly.   Next slowly pour in the milk and mix. Once mixed pour into a lightly creased pan and bake for 60 minutes.

When the loaf is done slowly pour the lemon juice over the top and then sprinkle with sugar. The heat of the cake will makes a lovely crust. Let cool and slice to serve.

I am not a big dessert person like I was as a child when I lived from brownie to brownie and pie to pie. This lemon loaf is light and does not impart a heavy feeling or leave a heavy sugary hangover. I do not have a habit of eating dessert usually. But when took my first bite, It made me think about eating the whole loaf in one sitting. It is that good.

The other think I like about this lemon loaf is for the most part you will have the ingredients on hand at any given time. I actually did not have a lemon the first time I made it so I just used bottled lemon juice. I put a little in the cake mix before I baked it and then also drizzled at the end to gave it that wonderful lemony flavor.

Refrigerated

  • 2 Eggs

Baking & Spices

  • 2 tsp Baking powder
  • 1 1/2 cups Flour
  • 1 tsp Salt
  • 1 cup White Sugar

Dairy

  • 6 tbsp Butter
  • 1/2 cup Milk

Instructions

  • Cream butter and sugar together
  • Add eggs, zest of lemon, flour, baking powder, and salt
  • Add milk to mixture
  • Bake 1 hour at 325F
  • While hot, cover with lemon juice and sugar
