Fri Diavolo Sauce

This is a tasty take on tan original Fri Diavolo which is a spicy tomato sauce for pasta and seafood. Don't be afraid the make it your own by adjusting heat levels and ingredients.

Ingredients

  • 2 tbsp Olive Oil extra virgin
  • 2 Banana Peppers cleaned, diced
  • 1/2 cup Onion diced
  • 3 cloves Garlic cloves rough chopped
  • 1/2 cup Portabella Mushrooms rough chopped
  • 4 Roma Tomatoes chopped, small
  • 28 oz diced tomatoes, can
  • 1/2 cup Kalamata and/or Greek olives can mix
  • 1/4 cup Basil chopped
  • 2 tbsp Oregano or fresh chopped

Instructions

  • Put olive oil in bottom of large saucepan and heat over medium burner
  • Add peppers, onions, garlic and mushrooms and saute until translucent and cooked down. About 5-8 minutes depending on heat.

  • Add diced Roma tomatoes and continue to saute another 5 minutes
  • Add can of dice tomatoes. Can use flavored tomatoes like basil and oregano or add herbs separately
  • Add basil and oregano and stir.
  • Cover and simmer. The longer the better but a minimum of 30 minutes to heat through.
  • Top your favorite pasta or seafood. Can be served as a garnish or sauce.
