Black Bean, Quinoa and Spinach Ragout
A quick one pot meal that can be customized to your flavors and pantry in minutes. You choose the bean, the grain and the green, mix them and it is still great on a plate.

Ingredients
- 4 cups Onions diced
- 3 tbsp Extra Virgin Olive Oil
- 3 cups Broccoli small florets
- 14 oz Black Beans canned
- 3 cloves Garlic minced
- 1 cup Spinach fresh or frozen
- 28 oz Marinara Sauce jar
- 2 cup Quinoa cooked
- 1/4 tsp Red Pepper Flakes
Instructions
- In large skillet over medium heat, saute onions in olive oil until slightly brown and caramelized. Add broccoli and saute for 4-5 minutes. Add black beans and garlic and heat for about 1 minute and stir. Add tomato sauce, red pepper flakes and quinoa and stir. Simmer for 3 minutes then add spinach and mix thoroughly just until spinach is wilted. Serve hot.
